The most commercially important organic acids are lactic acid, citric acid, gluconic acid and itaconic acid. They are used in a wide variety of applications as flavor enhancers in food, as ingredients in pharmaceuticals, cosmetics and beverages, and also in the chemical industry for the production of biopolymers, coatings, adhesives and others. The media components used in these products have a very large influence on the cost price of the organic acids, so the most effective cost in use ingredients are used in these applications.

The specific product recommendation is dependant on the microbe used to produce the organic acid i.e. Lactobacillus delbruckii, Gluconobacter, Aspergillus niger or Rhizopus oryzae.
